HAWAIIAN LUAU CHICKEN

Dutch Oven Recipe

1 fryer, cut up, or 3 chicken breasts
1 large #2 can pineapple
1/2 cup brown sugar
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 cup vinegar
1 tablespoon soy sauce
1/2 medium onion, chopped
1/2 medium green pepper
1/2 to 1 pound fresh mushrooms

Skin the chicken. In a 12" dutch oven brown the chicken in 1/4 cup butter or cooking oil for 20 minutes. Cover the oven and continue cooking until the chicken is cooked clear through. Push the chicken to the side and make the sauce in the same pan. Drain the pineapple and mix the sugar, cornstarch, salt, vinegar, and juice. Stir until thick. Combine the remaining ingredients and simmer over a small fire for 15 to 20 minutes.
